熏鱼其实不是熏的,而是炸的.上海一般用青鱼做熏鱼,我们习惯用草鱼.我家每年都会买一条特别大的草鱼,竖着切成厚片,先用酱油,黄酒,葱姜腌一下,晾干,让肉收缩得更紧致,吃着有嚼头,然后,另外调一碗汁儿待用,将鱼炸透了,趁热扔到汁儿里,嗞啦一声,那个香啊.每年做一大盆,能当凉菜吃,也能各种菜里都放一点,百搭.
